V8 Veggie Soup

Ingredients:
Onion (1/2)
Carrot (1/2)
Eggplant (2)
Mushrooms (white-1 package)
Chickpeas (1 bag-curry flavored is possible)
Cabbage (shredded-not nappa cabbage) (1/2 head)
Ground beef (1/4 lb)
Ginger (large chunk)
Wei Pa (1 tblsp chinese seasoning) ----> (see image)
V8 (2 cups)

Directions:
Chop all veggies into small - med pieces. (Remember to peel the ginger first). Chop eggplants into half circles.

Cook ground beef with ginger (no oil) until 80% done.
Add carrots and onion.
Add 1/2 cup of water, V8, and wei pa and cook for about 5 minutes.
Add eggplant, mushrooms, chickpeas and cook for a few minutes.
Add shredded cabbage and pepper (if necessary).
Cook for 10 min or until veggies are done.

Enjoy!

Note: If sauce is too thick add more water.

You can also add in soy sauce or hoister sauce for extra flavoring. Please feel free to add extra veggies or even use chicken instead of beef!
