Ingredients:
Pork (1lb thin strips=same size and shape as bacon but don`t use bacon)
Onion (1 med)
Kimchi (1 container or .5 lb)
Sesame oil (1/4th cup give or take)
Roasted Sesame seeds
Rice (1 cup white/1 cup brown)
Directions:
Put the rice to cook in rice cooker.
Cut the onion into long slices(Asian style).
Cook the pork in a skillet (no oil) with the onions. When the pork is half way cooked add the kimchi and sesame oil and cook for 10-15min.
When pork and kimchi are fully cooked, add in roasted sesame seeds and cook for 5 min.
Put stir fry over rice. Enjoy!
Note: This particular dish is oily due to the sesame oil having an extra oily texture however Kimchi is extremely healthy and among one of the healthiest foods in the world. (At least this is what`s written at the Kimchi Museum in Seoul).
With the sesame oil I generally just eyeball it. You want enough to coat everything but not so much that they are swimming in liquid. And as for the sesame seeds, this dish is not called Korean SESAME SEED Kimchi Pork Stir Fry so they should not be dominating the dish by any means. Think more like a generous topping.
Traditionally most Asian foods are served with white rice but unfortunately the nutritional value of white rice is about the equivalent of white bread....practically nothing. Therefore I mix it with brown rice so that it has more nutritional value but stays sticky for your stir-fry enjoyment!
