Lentil Soup



Ingredients:
Carrots (2 med)
Spinach (1 med bundle)
Tomatoes (2 fresh)
Tomatoes (crushed-1 can)
Potatoes (3 med)
Onions (1 med)
Dried lentils (3/4 - 1 cup)
Garlic (2-3 cloves)
Salt & Peper
Water
Herbs to taste (your preference of herbs)

Directions:
Dice: onions, carrots, potatoes, tomatoes (fresh), and garlic.
Cut spinch into med - large pieces.

Cook onions and garlic.
Add in veggies and cook until soft.
Add in lentils and pour in water (enough to cover everything).
Cook on low for about 20-30 minutes adding water as needed.
When lentils are pretty much done add in seasonings (Herbs + salt & peper) to taste.
Let simmer for an additional 5-10 minutes.

Tip: You may also include any additional veggies you want!

This is a recipe that is easy to play around with and alter.
