Ingredients:
Chicken Breast (2 breasts)
Zucchini (2 small)
Onion (1 med)
Bell pepper (2 any color)
Tomatoes (2 small)
Mushrooms (optional)
Spinach (optional)
Tomato puree (two 16oz bottles)
Basil (1 med or 2 small dry leaves)
Italian seasoning mix
Garlic powder
Salt & pepper
Directions:
Cut vegetables and chicken into small/med squares. (I usually like to cut the onions into long slices (Asian style) and zucchini into half circles)
Cook the chicken until half way done. Add onions, Italian seasoning, and garlic powder during this half way done process.
Add the tomato puree, zucchini, mushrooms, bell pepper and a little bit of water to smooth out the thick puree. Simmer for 10 min.
Add fresh tomatoes, spinach, and basil leaves. Simmer for another 5 min.
Add extra garlic powder, salt, pepper, Italian seasoning mix as needed. Once all ingredients have been added and the desired flavor reached, let simmer for another 10-15 min or until all vegetables are soft and tender.
Serve over any pasta of your choice! Enjoy!
Note: This makes enough for leftovers and/or for lunch the next day!
Substituting tomato puree with an already made pasta sauce is convenient however keep in mind the more fresh ingredients you use the more nutritional punch it has. Besides already made pasta sauce is usually too weak in the flavor department in my opinion! Sooo if you do use it spruce it up with the same seasonings used for the tomato puree, you just won`t need as much.
