Zucchini with Chicken (Soup/Stew)
Ingredients:
2 Zucchinis
1 Onion
1 Bell Pepper (green)
1 lb Chicken
2 Tomato
Sweet Corn (Stew: 1 can/ Soup: 2 cans)
4oz Tomato Sauce
Cumin Powder
Garlic Powder
Chicken Bouillon
Cayenne Pepper (Optional: gives it a spicy kick)
Directions:
Slice the zucchinis, onion, bell pepper, chicken and tomato into cube like sizes.
In a pan cook the chicken until half way done. Add the bell peppers and onions and continue to cook for a few minutes. (Until Soft)
Add the juice from the can(s) of sweet corn (leaving out the corn) and the tomato sauce. Throw in the zucchini slices. Add a little bit of water according to taste (about one cup).
Add in garlic powder, chicken bouillon, and cumin powder until desired taste is achieved. (I prefer well seasoned food so I put in a decent amount of each.)
Add tomatoes and corn, simmer for 10-15 min (until Zucchini slices are soft and slightly translucent).
Note: The less water you put into the pot the more sweet of a resulting flavor.
